Anxious to leave future generations a sustainable wine heritage and environmentally Lionel Lavail, naturally turned for almost 15 years to a 100% organic agriculture on the soil of the Tet Valley.
Around a tasting, he will take you on a journey by making you discover his wines, his history and the winegrower’s passion that has animated him from an early age.
Grape variety : Viognier
Terroir : Alluvion of the Têt, clay-limestone soil. Age of the vines: 20 years. Yield: 30hl/ha.
Wine making : Direct pressing. Cold settling (10/12°c) then fermentation in stainless steel tanks.
Maturation : Aged on fine lees in stainless steel tanks and bottled within 9 months after the harvest.
Tasting : A floral nose (mimosa) and on the kumquat. On the palate, vivacity and fullness give a nice balance and length. Fruity and persistent finish.
Food and wine pairing : Civet of lobster or accompanied by Calçots.
Grape variety : Syrah
Terroir : Alluvium of the Têt, soil of rolled pebbles. Age of the vines: 25 years. Yield: 35hl/ha.
Wine making : Destemmed harvest. Traditional maceration with temperature control for 10 days with daily punching down.
Maturation : Aged on fine lees in stainless steel tanks and bottled within 9 months after the harvest.
Tasting : Red and black fruits (cherry, blackberry). A wine from the terroir that is easy to drink, slightly spicy (licorice) and well structured.
Food and wine pairing : Boles de piccolat or beans Catalan style.
Grape variety : Syrah
Terroir : Alluvium of the Têt, granite soil. Age of the vines: 25 years. Yield: 30hl/ha.
Wine making : Direct pressing. Cold settling (10/12°c) then fermentation in stainless steel tanks.
Maturation : Aged on fine lees in stainless steel tanks and bottled within 9 months after the harvest.
Tasting : A wine with aromas of forest fruits and citrus fruits. A gastronomic rosé with a round mouth and a touch of minerality.
Food and wine pairing : Escalivade or salad with Anchovies from Collioure.
